Throwing a Father’s Day Barbeque: Recipe Ideas

With Father’s Day right around the corner, many children (and some mothers) are scrambling to find the perfect gift. But what does your dad want? The truth is that most fathers want nothing more than to sit back and relax this Father’s Day. So instead of giving your dad an elaborate (and probably expensive) gift, give him something he will really enjoy – a nice relaxing backyard barbeque. Because let’s be honest, the one thing most dads like more than relaxing is food.

So this Father’s Day, take your dad to his favorite place to eat – his backyard. Below you will find two delicious recipes perfect for your Father’s Day celebration.

1) Best Ever Barbeque Burgers

These grilled burgers taste like gourmet, infused with a saucy blend of sweet onion, garlic, pepper, tomato, steak sauce and crispy breadcrumbs, and are sure to turn your next cookout into one to remember.

Ingredients

1 sweet onion, chopped

1 green bell pepper, chopped

4 cloves garlic, peeled and crushed

1 tomato, chopped

2 tablespoons steak sauce

2 pounds ground beef

1/4 cup dry bread crumbs

Salt and pepper to taste

Cooking Instructions

  1. Preheat an outdoor grill for high heat and lightly oil grate.
  2. In a blender or food processor, gradually place sweet onion. green bell pepper, garlic and tomato. Blend into a thick liquid. Mix steak sauce into the mixture.
  3. Pour the blended mixture into a large bowl. Place ground beef into the bowl, and thoroughly mix together. Set aside approximately 15 minutes.
  4. Mix again if liquid is present, then gradually introduce dry bread crumbs until the ground beef mixture is firm enough to form hamburger patties. Salt and pepper to taste.
  5. Form the ground beef mixture into hamburger patties. Cook on the prepared grill to desired doneness.

2) Grilled Chicken and Mango Kabobs

Succulent chunks of chicken, drizzled in a honey-lime marinade and skewered with sweet mango, are as pleasing to the eye as to the palate and bring a taste of the tropics to your kitchen island.

Ingredients

1 tsp (5 mL) grated lime rind

1/4 cup (50 mL) lime juice

2 tbsp (25 mL) vegetable oil

3 cloves garlic, minced

2 tsp (10 mL) chili powder

1/2 tsp (2 mL) salt

1/4 tsp (1 mL) cayenne pepper

3 boneless skinless chicken breasts, 1 lb (500 g) total

2 tsp (10 mL) liquid honey

2 mangoes

1 sweet red pepper

1 small red or sweet onion, cut into 1-inch (2.5-cm) chunks

Cooking Instructions

  1. In small bowl, whisk together lime rind and juice, oil, garlic, chili powder, salt and cayenne pepper.
  2. Cut chicken into 1-inch (2.5-cm) cubes; place in separate bowl. Pour half of the marinade over top and toss to coat; let stand for 20 minutes. Stir honey into remaining marinade; set aside. (Make-ahead: Cover and refrigerate separately for up to 4 hours.)
  3. Meanwhile, cut off mango flesh from each side of pit. Cut grid pattern of 3/4-inch (2-cm) squares in flesh of each side down to (but not through) skin. Gently push skin to turn inside out; cut off flesh. Chop any flesh left on pit.
  4. Core, seed and cut red pepper into 3/4-inch (2-cm) pieces. Onto each of 4 long or 8 short skewers, alternately thread mango and red pepper pieces; brush with half of the reserved honey marinade.
  5. Alternately thread chicken and 2 or 3 onion pieces onto each of 4 more long or 8 short skewers. Discard marinade used for chicken. Place kabobs on greased grill over medium-high heat; close lid and grill, turning and basting chicken once with remaining honey marinade until fruit is softened and chicken is no longer pink inside, about 8 minutes.

Substitution: Use a small cantaloupe instead of the mangoes.
